On Being Demanding

“It was horrible. I wanted to yell back. I wanted to cry.”

An acquaintance recounted her time working as a restaurant manager in a Michelin starred restaurant. She was primarily responsible for front of the house. But her real job was being the employees’ bulwark against chef’s wrath.

She remembered a situation when the chef summoned her to the open kitchen. The restaurant was packed. He was unhappy with an orientation of asparagus, or something like that. Perfection was his middle name.

His neck veins nearly popped; his spittle was all over; his voice reverberated throughout the establishment.
